SOUL FOOD

We live in the South,

the land sweet tea,

buttermilk biscuits,

the Bible belt

and soul food.


SALMON CROQUETTES

Ingredients

1 12 oz can pink salmon
2 whole eggs
1/4 cup chopped onion
1/4 cup all purpose flour
2 tablespoons yellow corn meal
1/2 teaspoon salt
1/2 teaspoon ground black pepper

Pour all of the ingredients into a large bowl and mix them. Add more flour, if needed, to mold the dough-like mix that you end up with into patties (like thick homemade hamburgers).

Place oil in a frying pan and then preheat the oiled pan over medium heat. Add patties, fitting as many as you, can but leaving room to turn them. Cook until medium brown on one side, then turn over and do the same to the other side.

Serve with rice, corn, butterbeans, or Sweet Potato Pie (Below). Fill glasses with sweetened iced tea and enjoy!


SWEET POTATO PIE

Ingredients

4 large sweet potatoes
2 cups sugar
1 stick butter
1 pinch cinnamon
1 pinch nutmeg
1 store-bought pie crust
1/2 cup milk

Boil the potatoes until tender, but not so soft they fall apart. Let the potatoes cool and then peel them.

Put the potatoes in a large mixing bowl and mash well. Melt butter, add to mashed potatoes, and and rest of ingrdients. Mix well. Pour into pie crust.

Bake at 375 degrees for 35 to 40 minutes, or until center is set. Good to eat hot or cold.
